Healthy Smoked Salmon Pasta

 I concocted this out of my passion for smoked salmon, consuming my Omega's and enjoying a delectable light meal. Hope you enjoy it as well:


1/4 Cup extra-virgin olive oil

6 - 8 chopped green onions

1/4 pound chopped smoked salmon {I used a marvelous peppered Cajun salmon found at Trader Joe's}

1 Cup Coconut Cream {canned}

Fresh chopped Basil to taste

Smidgin' of your fav Garlic spice, sea salt and fresh ground pepper


1 Lb. cooked Jerusalem Artichoke Flour pasta or any light thin pasta noodles


Heat the olive oil over medium-high. Add the onion and sauté; add the smoked salmon and cook just until salmon turns opaque. Pour in the coconut cream and the seasonings until heated thru.


Mix with the cooked pasta and prepare to salivate!


{NOTE: if it doesn't appear there is enough sauce, add a 1/2 cup of the water you cooked the pasta in ~ I did and it was marvelous}
